We hand craft our own brand of small batch and artisanal charcuterie in the small town of Basalt, Colorado nestled in the Roaring Fork Valley near Aspen. We feel that our altitude of 6600 feet above sea level mimics the mountains of Italy and Spain and creates our own unique terroir.
Our products are made from Berkshire Heritage Breed Pork raised by one co-op of farms based out of Texas. The animals are all Gap 1 certified as part of the Global Animal Partnership and Wellness Program. The hogs are never given growth hormones or antibiotics, fed a 100% vegetarian feed, and given a great life. We hand craft our products all naturally and use sea salt and cultured celery powder for all of our curing. No additional nitrates or nitrites are added, giving the products a clean, all natural flavor. Using locally made craft wine and high-end spices, our salumi has the best flavor!
